Eggs keep much longer than you'd expect. Five to six weeks is common, and some studies have shown they can be usable as long as 10 weeks if they are kept refrigerated and handled properly.
The time varies depending on how old the eggs were before you bought them. Eggs can be up to 30 days old before they reach a supermarket.
If the egg carton is dated, which is required in some states, that's the sell-by date, not an expiration date. It just shows how long the eggs can stay on the shelf at the store.
Older eggs can even be an advantage in some uses. Eggs that are a couple of weeks old are much easier to peel when you hard-cook them.
One way to check whether an egg is too old is to place it in a bowl of water. Very fresh eggs will sink; older eggs might stand up a bit, and eggs that are too old will float. Of course, if you ever crack an egg and it has a bad odor, discard it immediately. |
